MODEL COCKTAIL SERVER-Hakkasan Nightclub Las Vegas
POSITION SUMMARY: The Model Cocktail Server markets the restaurant, nightclub, lounge, pool and is responsible for like services offered to a targeted customer base. The Model Cocktail Server follows all specific marketing requirements and guidelines while focusing on the development of a personal clientele list. The Model Cocktail Sever performs in a public relations capacity when promoting the Company and is responsible for beverage service of all tables and seating areas in a high volume bar, nightclub, lounge or pool. The Model Cocktail Server assists the department head with the training/mentoring of new employees as requested; maintains all assigned wardrobe/costumes in accordance with established standards and uniform guidelines; requests identification from customers when legal age is questioned; works in an efficient and professional manner while maintaining a positive attitude and delivering superior guest service at all times.

ESSENTIAL FUNCTIONS OF THE POSITION INCLUDE, BUT ARE NOT LIMITED TO:

GUEST SERVICE/COMMUNICATIONS

Entertain the crowd with dance routines learned at scheduled classes
Greet all Guests promptly and with a friendly and upbeat attitude
Be a brand advocate by providing Guests with accurate information regarding our venues, menus and pricing
Provide Guests with information and directions
Respond to Guest inquiries and requests in a courteous and polite manner
Anticipate Guest needs
Recognize and cultivate regular Guests and repeat business
Ability to communicate in English with Guests and co-workers
Promptly inform management of any complaint, comments or incident
Adhere to all Standard Operating Procedures
Maintain all Sequence of Service Standards
Appear in uniform for all shifts and promotional activities, at or away from the club
Pose for pictures as requested by management

RESPONSIBLE ALCOHOL MANAGEMENT

Recognize and acknowledge when Guests are becoming intoxicated and/or are intoxicated
Monitor potentially intoxicated and/or disruptive Guests and promptly bring to a Manager’s attention
Refuse further service of alcohol to intoxicated Guests in a courteous and safety-minded manner
Responsible for accurately checking Guest identification
Comply with all safety and health department procedures as well as Company and/or departmental policies/procedures
Comply with all state and federal liquor laws

CLEANING AND MAINTENANCE OF WORK AREA

Maintain line of sight/atmosphere control by circulating through your work area throughout shift
Keep all table tops, floors and service areas clean/free of dirty glasses, dirty ashtrays, and any unnecessary items throughout shift
Keep service station and service equipment storage clean and organized
Ensure daily/nightly/weekly and opening/running/closing duties are completed
Maintain opening and closing service equipment par
Ensure that all tables and chairs are in good condition, clean, and set correctly
Place all trash in proper receptacles
Clean all spills and waste immediately
Record and report any equipment failure and/or safety hazards to Management immediately
Maintain all Hakkasan standards as well as local Safety and Sanitation Standards

PROMPT, CORRECT & COMPLETE SERVICE OF BEVERAGES

Organize and prioritize service per appropriate service sequence
Take bottle menu, beverage, food, and bar orders from Guests and communicate orders to the service bar through POS terminal
Check all orders prior to serving to ensure accuracy, proper presentation and verify that all special requests have been met
Garnish any and all beverages as needed according to standard recipes and venue specifications
Prompt delivery of all orders to appropriate sections and tables

CASH HANDLING

Prepare Guest checks through POS terminal functions
Verify by checking guests identification when using debit or credit card
Process Guest payment by cash, credit card, venue comps and all other appropriate tender types
Collect required signatures from Guest
Ensure accurate accounting of all bar monies and independent banking procedures
Sign all cash out slips legibly
Ensure complete and proper check out procedures

MARKETING/PROMOTIONS
The marketing and promotions requirements as described below are representative of the minimum requirements of those that must be met by an employee to successfully perform the essential functions of this job.

Must have and maintain a Facebook page used for work which identifies the property and its events (ex: John Doe @ Hakkasan)
**The Company will assist with set up

Must have and maintain a Twitter page used for work
Must have seven (7) tweets per week in relation to the respective venue worked
Must have and maintain an Instagram account
Must have a ten (10) person guest list when requested
Must submit a Complete Section Report for each table, details will include:
Host for the evening

Names of Guests

Brief description and preferences of the Guest’s

What was the Guest’s celebration/event (birthday, anniversary)

Guests phone number and email account
RESPONSIBILITIES/ TEAMWORK/ DEPARTMENT

Assist all other team members as needed
Create and maintain a sense of urgency
Appear in complete uniform for all shifts and promotional activities at scheduled time
Present an alluring and attractive image to further the overall theme of the club
Ability to create and maintain service rapport through the Corporate philosophy
Perform related duties as assigned
EDUCATION/REQUIREMENTS:

High School Diploma or equivalent preferred
2+ years in high volume restaurant and/ or nightclub preferred
Proof of eligibility to work in the United States
Valid Driver’s License
21+ years of age
Possession of/or ability to possess a valid State Alcohol Awareness Card, Sheriff’s Card, Food Handlers Card, and Non-Gaming Licensure
Maintain a professional, neat and well-groomed appearance adhering to Union MOA and Company standards

WORK ENVIRONMENT & SCHEDULE:

Hours may be part-time (less than 30 hours per week)
Schedule could exceed 30 hours per week and may include overtime when approved by management
Work varied shifts to include days, nights, weekends and holidays
